Adrift Kitchen: Blueberry Pancakes

Blueberry Pancakes

 

Get ready to make some fluffy pancakes at home with ease... plus they're super filling, nutritious and delicious!  This recipe is quick and easy to follow and is versatile enough that you could throw in any of your favourite berries or add any toppings.  This was a delectable treat in the Adrift HQ Office - we hope you love it too! 


Prep time: 5 minutes                Cook time: 10 minutes                Servings: 10-12 pancakes


Ingredients:

200 g self raising flour

1 tsp baking powder

1 egg

½ tsp salt

300 ml skim milk

150 g blueberries

Cooking spray to fry

 Blueberry Pancakes

Instructions

  1. Combine the flour, baking powder and salt. 

  2. In a jug, whisk the egg with the milk.

  3. Make a well in the dry ingredients and add the wet ingredients, whisking them together until you have a smooth batter.

  4. Fold in 3/4 of blueberries save the rest to serve with the pancakes. 

  5. Heat cooking spray in a frying pan.

  6. Drop a large tbsp of the batter into the pan to make a pancake of around 7.5cm across.

  7. Fry for about 3 minutes until bubbles form on the top of the pancake, then flip over and cook for another 3 minutes. Continue cooking until you’ve used all of the batter.
