A dish that ticks all of the boxes being easy to make, healthy and delicious...that's our Vegetarian Pineapple Fried Rice! Filled with juicy pineapple, cashews, and golden grains of rice, you will be going back for seconds and thirds. Serve it in fresh pineapple bowls to make it look extra tropical for a fun family dinner.
Prep time: 30 minutes Cook time: 8 minutes Servings: 5-6
2-3 tbsp oil
3-4 cups cooked rice (preferably several days old; if fresh, leave in fridge uncovered for an hour)
3 tbsp soy sauce
2 tsp curry powder
2 shallots, finely chopped
3 cloves garlic, finely chopped
1 red or green chilli, thinly sliced (or 1/4-3/4 tsp of chilli flakes)
1/4 cup vegetable stock
1 small carrot, grated
1/2 cup frozen peas
1 small can of pineapple chunks, drained, or 1 1/2 cups fresh pineapple chunks
1/4 cup raisins
1/2 cup roasted unsalted whole cashews
3 spring onions finely sliced
1/3 cup fresh coriander leaves
Lime juice (optional)
- Mix 1 tbsp of oil with with the rice, making sure to separate any chunks. Set aside.
- In a cup, mix soy sauce with curry powder.
- Drizzle 1 to 2 tbsp of oil in a large frying pan over medium-high heat. Add shallots, garlic and chilli and stir thoroughly for about 1 minute. Whenever the pan seems dry, add 1 tbsp of stock at a time to keep ingredients sizzling.
- Crack the egg into the pan and stir quickly to cook. If you would prefer to make this into a vegan dish, you can leave out the egg.
- Add carrot and peas. Stir-fry for 1 to 2 minutes, adding more stock if needed.
- Add rice, pineapple chunks, raisins and cashews. Drizzle the soy sauce mixture on top and gently stir-fry on medium-high to high heat to combine. Do so for about 5-8 minutes until the rice begins to make popping sounds, or until your desired lightness is achieved. (Avoid adding any more stock so as not to achieve soggy rice. Oil can be used if the pan seems dry.)
- Remove pan from heat and add salt, pepper or soy sauce to taste. If the taste is too salty, add some lime juice to combat this.
- To serve, scoop onto a serving platter (or in your carved-out pineapple!) and top with spring onions, coriander and lime juice.
