Lunchtime in the Office: Rainbow Pasta Salad

With the new year in full swing, most of us are back at work, either in the office or working from home. Whilst it can be tempting to buy lunch everyday from your favourite cafe (guilty!), it's great to take your lunch to work to not only save money, but also suit your meal exactly to your taste buds! We've been loving pasta salads here at the Adrift office because it's cool and refreshing for the summer, but still has that delicious Italian flavour. This recipe we found online is so easy to make, and we can confirm it tastes DELICIOUS. Serves: 4 (depending on your serving size)

Prep and cook time: approx. 20 - 30 minutes

Ingredients:

  • 300g green beans (end trimmed) cut into 3cm pieces
  • 200g spiral or bowtie pasta
  • 420g can of corn kernels, drained
  • 420g four bean mix, drained
  • 250g cherry tomatoes
  • 1 medium red capsicum, seeded and cut into 3cm strips
  • 1/2 medium red onion, peeled and finely chopped
  • 1/2 cup sun-dried tomatoes, drained and roughly chopped
  • 1/2 cup flat-leaf parsley, finely chopped
  • 1/2 cup basil leaves, finely chopped

For the dressing:

  • 1.5 tablespoons Dijon mustard
  • 1/2 tablespoon honey
  • 1/2 tablespoon white vinegar or white wine vinegar
  • 1/2 tablespoon water
